Sourdough Conversion Chart

Download our free sourdough conversion chart for cups to grams, including flour, starter, discard, water and salt.

Most sourdough recipes are listed in grams. A cup of flour can vary a lot depending on how you scoop it. Weighing your ingredients gives you the same dough every time, which matters even more in sourdough, where small changes can affect how your loaf rises and tastes.

We made a simple conversion chart for everyday sourdough baking. It’s one page, easy to read, and made to hang on the fridge or sit beside your mixing bowl. If you don’t have a kitchen scale yet, the chart is a good place to start.

A few tips

  • Use active starter, bubbly and at its peak, when a recipe calls for it.
  • Spoon flour into your measuring cup and level it off rather than scooping straight from the bag.
  • Treat the chart as a guide, and adjust a little for your own flour and kitchen.
