Sweet Potato Breakfast Burrito

Sweet potato breakfast burrito for a healthy gut

Serving: 1 large burrito or 2 small burritos
Cooking time: 20 minutes

 

Ingredients

  • 2 eggs
  • ½ medium sweet potato
  • 2 slices turkey bacon 
  • ½ cup chopped spinach
  • 1 large flour tortilla
  • 2 tbsp avocado oil (or olive oil)
  • 1 tsp ground turmeric
  • ½ tsp black pepper
  • 1-2 tbsp salsa (or hot sauce)
  • 1 tbsp plain Greek yogurt

Instructions

  1. Cut bacon into bite size pieces, then cook on a pan on medium high heat until desired crispiness.

  2. Clean and peel sweet potatoes. Pulse in a food processor until finely grated, or dice into small bite size pieces with a knife.

  3. Place potatoes in a pan with 1 tbsp oil and mix in turmeric and black pepper. Cook on medium high heat for about 5-7 minutes until soft. If you can easily poke a fork into them and they are soft, they're ready!

  4. Scramble eggs in a pan with 1 tbsp oil and cook on medium heat until cooked through. Once done, turn the stove off. Sprinkle chopped spinach on top, so it warms up, but does not cook and remains crisp.

  5. Warm the flour tortilla. Then add potatoes, eggs, spinach, and bacon to the tortilla. Top with your choice of salsa and sour cream. Roll into a burrito and enjoy!
