Roasted Garlic Lentil Dip

Ingredients

1 cup red lentils cooked

8-10 peeled garlic cloves

Juice of 1 lemon

1/4 cup parsley

4 Tbs olive oil

1 tsp salt

1/4 tsp pepper

 

Instructions

  1. Bake garlic cloves with 1 Tbs olive oil in the oven at 425 for 15-20 minutes or sauté in a saucepan with 1 Tbs olive oil over medium heat until golden brown. Let the garlic cool.
  2. Add all ingredients to a food processor or blender until completely blended and smooth.
  3. Transfer to a dish and drizzle with olive oil. Enjoy!
