Easy Pickled Onions

Health Benefits of Pickled Onions

  • The pickling process creates a beneficial bacteria called Lactobacillus that is responsible for maintaining a healthy gut.

  • Onions are considered a superfood with high levels of antioxidants, vitamins, and nutrients like magnesium, potassium, calcium, vitamin C, vitamin B6, and folate (B9).

  • Pickled onions are a good source of fiber which helps support a healthy digestive system.

 

Yield: 24 oz jar
Prep time: 10 minutes
Marinate time: 10-14 days

 

Ingredients

24 oz glass jar with lid (or larger)
1 medium onion
½ tsp salt
Balsamic vinegar
Olive oil

 

Instructions

  1. Peel and slice the onions as thin as you can. 
  2. Separate all onion slices so that they are individual pieces. Tightly pack the sliced onions into the jar.
  3. Add the salt to the onions.
  4. Pour balsamic vinegar over the onions until the jar is filled about ⅔ to ¾ of the way full.
  5. Fill the rest of the jar with olive oil.
  6. Seal the lid tightly on the jar and shake a few times to mix.
  7. Place the jar in the refrigerator.
  8. Flip the jar over once every 24 hours. The pickled onions will be ready to eat in about 10-14 days but can be enjoyed any time before.

 

Notes:

  • Any type of food grade vinegar can be used. Ex: red wine vinegar, apple cider vinegar, distilled white vinegar, balsamic vinegar.
  • Any type of onions can be used. We used white onions in our recipe, but you can use red or yellow.
  • The thinner you slice the onions, the faster they will pickle. The thicker the onions are, the crunchier they will be and the more time they will need to pickle.
  • When they're ready to eat, they will be more of a brown color and will taste a little less crunchy and raw.
       


      How to enjoy pickled onions

      • On sandwiches, burgers, wraps, paninis, or tacos.
      • As a side with breakfast. The pickled onions will aid in digesting the fat from bacon and sausage.
      • As a side with meat. Steak, chicken, BBQ pork, or seafood.
      • On salad, pizza, or soup.
      • Use the leftover marinade as a dressing for salad, pasta, or dipping bread.

       

      Flavor Variations

      Mix it up with your favorite seasonings, herbs, or spices.

      • GarlicAdd in a clove or two of thinly sliced garlic.
      • Herbs - Add a few sprigs of fresh herbs or a pinch of any dry herbs/seasonings that you want. (Rosemary, parsley, bay leaves, oregano, thyme, basil, dill, chives, etc.)
      • Peppery - Add in a few peppercorns or a few twists of cracked black pepper.
      • Spicy - Add in a slice or two of jalapeño peppers, or a pinch of crushed red pepper flakes.
